
Chia, Almond and Parmesan Crackers

Ingredients
- 30g Chia Seeds
- 100g Almond Flour
- 75g of Parmesan
- 2 tbsp of MCT Oil
- 20g of Sesame Seeds
- 2 tbsp of Collagen
- Good pinch of Celtic Sea Salt
Method
Step 1
Preheat the oven to 175°C
Step 2
Prepare the chia mixture: Combine the chia seeds with 120ml of water. Let it sit for 15 minutes to thicken and form a gel-like consistency.
Step 3
Combine ingredients: In a large bowl, mix the chia mixture with the almond flour, collagen, parmesan, sesame seeds, MCT oil, and a pinch of salt. Stir well until everything is fully combined.
Step 4
Roll out the dough: Place the mixture onto a sheet of parchment paper. To avoid sticking, place another sheet of parchment paper on top and roll it out with a rolling pin until the dough is as thin as you like (the thinner, the crispier)
Step 5
Cut into squares: Once rolled, use a knife or pizza cutter to slice the mixture into small squares or desired shapes (you can also just break up the cracker once baked)
Step 6
Place the parchment paper with the cracker dough onto a baking tray and bake for 15-20 minutes, or until golden and crispy. Keep an eye on them to prevent burning. You may want to flip the crackers half way through baking to ensure they cook evenly.
Step 7
Once baked, allow the crackers to cool on the tray. They will crisp up further as they cool.
