The perfect summer salad with extra brain energy. The fruity fresh spinach salad, packed with nutty loveliness will curb those cravings and fill you up with goodness.

Ingredients

  • 200g of Spinach leaves
  • 50g of Walnuts, halved, slightly broken and ideally, activated.
  • 100g of Blueberries
  • 2 small scoops of MCT Oil or Olive Oil
  • 2 tsp of Apple Cider Vinegar (we love Willy's)
  • Zest of half an Orange
  • 1 tbsp of fresh Basil
  • 50g of Feta Cheese, crumbled (optional, for added creaminess)
  • Salt and Pepper

Method

Step 1

Make your dressing by adding your oil, vinegar, orange zest and salt and pepper to a jar - pop the lid on and shake.

Step 2

Pop your spinach, basil, blueberries, activated walnuts and feta to a bowl and dress.
